The most important thing to consider is the type of food truck you’d like to use. While all of these are usually called a food truck, there are in-fact three distinct categories; food truck, food cart, food trailers. Let’s cover these in more detail.
Food trucks in the literal sense of the words are the most vehicles you’ll see serving you food and drinks by the site of the road. These are perfect as they allow the owner to easily move location while also use it to prep and serve food. Furthermore, these have the least complications as everything is built-in and centrally manageable.
Food Cart
Food carts are the smallest of the three food truck options. These are small and easily manageable and can be moved to a location with any vehicle with a tow bar. While these are cheap and great for getting started, they do have their limitations. You’ll be able to serve less food and drinks, but it does get your foot in the door and start your food truck business. Of course, in some cases e.g. a drink truck, this will be more than enough to run your business.
Food Trailers are the largest and the most expensive but also the most spacious. Food trailers are the best option when you’ve got a highly successful food truck. These allow you to serve large amounts of food, and comfortable have multiple employees within them. Of course, you will need a vehicle that can get it to location, but once there it can keep serving customers nearly endlessly. Some extra-large food trailers also have the option of seating customers inside it and creating outdoor seating areas too.
How to Choose Your Food Truck Size?
Now that we’ve discussed food truck sizes, it’s time to discuss how to choose the right one for you. Choosing the right food truck is more than just finding one that you like the look of.
What are You Serving?
What you’re serving is one of the most important factors to decide your food truck size. If you’re only serving drinks, then a reasonable small truck will do the job. Whereas if you’re catering for weddings you’ll probably need a food truck if not a food trailer. Apart from the space for storing the fresh ingredients, you’ll also need space to make your menu. If you’re making giant pancakes you’ll need more space than if you’re making toasties.
How Many Will I Serve?
Additionally to what you’re serving, you need to consider how many people you will serve. If you only plan on serving a handful of people a day you’ll need a lot fewer resources than if you’re catering on the corner at Silicon Valley. It might be difficult to determine how many people you will cater to, and your competition is unlikely to reveal it, so you’ll probably have to stand on a few street corners to figure this out.
Number of Employees
One of the lesser factors is the number of employees you’ll have. Food trucks are usually limited to three in some cases four, but the more you have, the harder it is for them to move around. Interestingly, with a food cart, you can have as many as you’d like as they can stand around it, and don’t need to be inside it. If you are looking to have more than 3-4 employees than a food trailer is really your only option. Of course, if you’ve managed to scale your food truck to this size, then you shouldn’t have too much of an issue sourcing this.
